Did they ever get to the Red Dragon stuff where Will Graham has to get Lecter's help in catching a killer? That would have been a good spot to end, but your idea is even better since Silence of the Lambs is the most iconic of the movies.
What I'd really love to have seen, is for the show to last long enough to get to the stuff from Hannibal, and give a proper adaptation, including sticking to the author's ending where Clarice and Hannibal end up as lovers/murderers gallivanting around the world of international high society and finding people to kill and eat.
Yes, this last season was all about Red Dragon. Last ep was them killing him. Bloody, stabbed, etc. They are sort of hugging each other and go over the cliff together and that's the end. Of course, we know that's not the end, because Silence of the Lambs.
